Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix garlic, lemon juice, zest (optional), olive oil, and salt.
- Pat chicken thighs dry and rub the marinade all over the chicken.
- Let it sit for at least 15 minutes (or refrigerate for a few hours if you have time).
- Place chicken in a baking dish or cast iron skillet, skin side up. Roast uncovered for 35–40 minutes, or until the skin is crispy and internal temp reaches 165°F (74°C).
- Let rest 5 minutes before serving.
