Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 3 cloves garlic, minced
  • Juice of 1 lemon (plus zest, optional)
  • 2 tbsp olive oil
  • 1 tsp sea salt (adjust to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix garlic, lemon juice, zest (optional), olive oil, and salt.
  3. Pat chicken thighs dry and rub the marinade all over the chicken.
  4. Let it sit for at least 15 minutes (or refrigerate for a few hours if you have time).
  5. Place chicken in a baking dish or cast iron skillet, skin side up. Roast uncovered for 35–40 minutes, or until the skin is crispy and internal temp reaches 165°F (74°C).
  6. Let rest 5 minutes before serving.
