Ingredients:
- 500g ground pork (with a bit of fat for moisture)
- 200g cooked ham, chopped or shredded
- 1 tablespoon sugar
- 1 tablespoon salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon white pepper (or black if that’s what you have)
- 1 tablespoon cornstarch or potato starch
- 2 tablespoons cold water
- Optional: 1 teaspoon smoked paprika for a smoky flavor
Instructions:
- Prep the Meat Mix:
In a food processor or blender, combine the ground pork and cooked ham until it forms a smooth paste. This gives that signature dense, sliceable texture. - Season and Bind:
Add sugar, salt, garlic powder, onion powder, pepper, cornstarch, and water. Blend again until everything is well combined. - Pack and Shape:
Line a loaf pan with baking paper or lightly grease it. Firmly press the meat mixture into the pan to remove any air pockets. - Bake:
Cover with foil and bake at 160°C (320°F) for 1 hour. For a firmer texture, you can place a weight on top after cooling. - Cool and Slice:
Let it cool completely in the fridge (best overnight). Slice and pan-fry as desired.
Suggestions & Alternatives:
- No food processor? Just mince the ham finely with a knife and mix thoroughly with your hands or a spoon.
- Pork-free version: Use chicken thigh + turkey ham or even tofu + mushrooms for a plant-forward take.
- Smoky version: Add 1 tsp liquid smoke or smoked paprika for that canned meat flavor.
- Freezer friendly: Slice and store with parchment paper between slices for easy reheating.
