Homemade Mole Paste


Time: Prep 20 min | Cook 20 min
Yields: About 1½ cups of paste (enough for 2–3 meals)


Ingredients

  • 2 dried ancho chilies (stems and seeds removed)
  • 2 dried guajillo chilies (optional, adds smokiness)
  • 2 tbsp olive oil or avocado oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 2 tbsp natural peanut butter or almond butter
  • 1 tbsp raisins or 1 dried fig
  • 1 tbsp sesame seeds
  • 1 slice whole wheat or sourdough bread (torn)
  • 1 small tomato (or 2 tbsp tomato paste)
  • 1.5 oz dark chocolate
  • Salt to taste
  • Splash of water or broth (just enough to blend)

Instructions

  1. Toast & Soak the Chilies:
    In a dry pan, lightly toast the chilies on both sides until fragrant. Soak in hot water for 10 minutes until softened.
  2. Cook the Base:
    In a skillet, heat oil. Add onion and garlic. Sauté until soft. Stir in cumin, cinnamon, and cloves. Cook 1 minute.
  3. Add the Good Stuff:
    Add nut butter, raisins, sesame seeds, bread, tomato, soaked chilies, and chocolate. Stir well and cook 5 minutes.
  4. Blend it Smooth:
    Let it cool slightly, then transfer to a blender. Add just enough water or broth to blend into a thick, smooth paste. Add salt to taste.
  5. Store it Up:
    Cool and store in an airtight jar in the fridge for up to 1 week, or freeze in cubes or scoops for longer storage.

To Use:

  • Quick Mole Sauce: Mix 3–4 tbsp paste with 1 cup chicken broth. Simmer until smooth.
  • Marinade: Mix with oil or lime juice and rub onto meats before grilling or roasting.
  • Boost Beans or Rice: Stir a spoonful into beans, soups, or cooked rice for a rich, warm flavor.

Suggestions & Alternatives

  • Nut-Free Option: Use tahini or roasted sunflower seed butter.
  • Sweeter Mole: Add 1 tsp maple syrup or honey.
  • No dried chilies? Try 1 tbsp chili powder + 1 tsp smoked paprika in a pinch.
