Ingredients
- 4 bone-in chicken thighs or breasts
- Salt and pepper to taste
- 1 tbsp olive oil or avocado oil
- 1/2 cup homemade mole paste
- 1½ cups chicken broth sodium
- 1 tsp sesame seeds (for garnish)
- Fresh cilantro or chopped parsley (optional)
Instructions
- Season & Sear the Chicken:
Pat chicken dry and season with salt and pepper. In a large skillet, heat oil over medium-high. Sear the chicken until golden brown on both sides (about 5–7 min total). Remove and set aside. - Deglaze the Pan:
Lower heat to medium. Add a splash of broth to loosen the browned bits in the pan (extra flavor!). - Add the Mole Paste:
Stir in ½ cup mole paste and whisk in the rest of the chicken broth until smooth. - Simmer Together:
Return chicken to the pan, spoon sauce over the pieces, cover, and let simmer for 25–30 minutes, or until chicken is fully cooked and tender. - Serve & Garnish:
Plate the chicken and spoon extra mole sauce on top. Garnish with sesame seeds and chopped cilantro if desired.
Serving Suggestions
- Over white rice, quinoa, or cauliflower rice
- With warm corn tortillas or roasted sweet potatoes
- Side of lime-dressed salad or sautéed greens
Suggestions & Variations
- Boneless option: Use boneless thighs or breast, reduce simmering time to 15–20 min.
- Vegetarian version: Sub in roasted cauliflower, mushrooms, or tofu.
- No broth? Use water with a pinch of salt and 1 tsp tomato paste.
