Chicken Mole Using Homemade Paste

Ingredients

  • 4 bone-in chicken thighs or breasts
  • Salt and pepper to taste
  • 1 tbsp olive oil or avocado oil
  • 1/2 cup homemade mole paste
  • 1½ cups chicken broth sodium
  • 1 tsp sesame seeds (for garnish)
  • Fresh cilantro or chopped parsley (optional)

Instructions

  1. Season & Sear the Chicken:
    Pat chicken dry and season with salt and pepper. In a large skillet, heat oil over medium-high. Sear the chicken until golden brown on both sides (about 5–7 min total). Remove and set aside.
  2. Deglaze the Pan:
    Lower heat to medium. Add a splash of broth to loosen the browned bits in the pan (extra flavor!).
  3. Add the Mole Paste:
    Stir in ½ cup mole paste and whisk in the rest of the chicken broth until smooth.
  4. Simmer Together:
    Return chicken to the pan, spoon sauce over the pieces, cover, and let simmer for 25–30 minutes, or until chicken is fully cooked and tender.
  5. Serve & Garnish:
    Plate the chicken and spoon extra mole sauce on top. Garnish with sesame seeds and chopped cilantro if desired.

Serving Suggestions

  • Over white rice, quinoa, or cauliflower rice
  • With warm corn tortillas or roasted sweet potatoes
  • Side of lime-dressed salad or sautéed greens

Suggestions & Variations

  • Boneless option: Use boneless thighs or breast, reduce simmering time to 15–20 min.
  • Vegetarian version: Sub in roasted cauliflower, mushrooms, or tofu.
  • No broth? Use water with a pinch of salt and 1 tsp tomato paste.
