Ingredients
Filling:
- 2 medium apples, peeled and diced (Fuji, Gala, or Honeycrisp)
- 1 tablespoon coconut oil or butter
- 1½ teaspoons curry powder (no preservatives or MSG)
- ¼ teaspoon cinnamon
- 1–2 teaspoons maple syrup or coconut sugar (optional)
- Pinch of sea salt
- 1 teaspoon arrowroot or tapioca starch
- Juice of ½ lemon
Dough:
- 1 package of premade pie crust or puff pastry (look for additive-free or organic brands such as Immaculate Baking, Jus-Rol, or Wholly Wholesome)

Instructions
- Prepare the filling:
In a pan, heat coconut oil over medium heat. Add apples, curry powder, cinnamon, and salt. Cook 5–7 minutes until softened. - Stir in lemon juice and maple syrup. Sprinkle in arrowroot or tapioca starch to thicken. Simmer 1–2 minutes more, then set aside to cool.
- Roll and fill the dough:
Unroll the premade dough onto a floured surface or parchment. Cut into circles or rectangles using a cookie cutter or knife. - Place a spoonful of filling on one half of each piece. Cover with a second piece and crimp edges with a fork to seal.
- Optional: Brush tops with egg wash or dairy-free milk.
- Bake at 375°F (190°C) for 22–25 minutes, or until golden and crisp.
- Cool slightly before serving.
